Tali Wiru, meaning 'beautiful dune' in local Anangu language, encapsulates the magic of fine dining under the Southern Desert sky. Instead of walls, this open-air restaurant has magnificent views of Uluru and the distant domes of Kata Tjuta, and for unique ambience there's the stillness of the desert at night.

Every course of this exclusive four-course dinner is infused with ancient native herbs and spices. Each dish is constructed to respect and put a spotlight on the quality and attributes of each ingredient and bring them together in harmony. Taste items such as Paroo Kangaroo Tartare with wattleseed lavosh and fingerline as a canape, Port Lincoln Kingfish Sashimi with torched scampi caviar as an entree, while main course could be pan roasted Glacier 51 Toothfish with desert lime, lemon myrtle and caper cream. Dessert is sunrise on a plate with Desert Lime Brulee with desert lime, blood orange, mandarin, pistachio, mango mousse, matcha sponge and wattleseed meringue . Each dish carefully paired with premium Australian wine.
