Tali Wiru, meaning 'beautiful dune' in local Anangu language, encapsulates the magic of fine dining under the Southern Desert sky. Instead of walls, this open-air restaurant has magnificent views of Uluru and the distant domes of Kata Tjuta, and for unique ambiance there's the stillness of the desert at night.

Every course of this exclusive four-course dinner is infused with ancient native ingredients. Each dish is constructed to respect and put a spotlight on the quality and attributes of each ingredient and bring them together in harmony. Taste items such as yellowtail kingfish with yuzu pearls, fermented quandong salsa, scampi caviar and desert lime as one of the canapes, Japanese scallops with duck foie gras espuma, picked munties, ikura shoyu zuke, samphire, salt bush and quandong and rosella crumb as your entree, while main course could be pan Glacier 51 Toothfish with polenta, sea grapes, edamame, beach succulents, sour butternut puree and vermouth cream. Dessert is a desert honey mousse with kakadu plum compote, matcha sponge and honey tuile. Each dish carefully paired with premium Australian wines.
