The Bush Tucker Journeys program at Ayers Rock Resort brings ancient flavours of the outback into modern cuisine. Discover Indigenous food, flavours and culture in Australia's spiritual heart.
'Bush tucker' is the Australian term for the huge variety of native herbs, spices, fruits, seeds, insects and wildlife that Indigenous Australians have been eating for tens of thousands of years.
From open air fine dining and traditional bush tucker tastings to bush yarns and garden walks; every experience combines local Indigenous culture with native flavours.
Join a new free daily Bush Food Experience and learn about native Australian ingredients. At the Bush Yarn, a storyteller talks about the skill of a hunter and its spears, clubs and boomerangs. On one of the free daily Garden Walks, learn the gatherers' ways as you discover how Indigenous people traditionally lived by using the bush for food.
Ancient flavours take centre stage at each of Uluru's under the night sky dining experiences; A Night at Field of Light, the award-winning Sounds of Silence and the pinnacle of the outdoor dining experiences, Tali Wiru.

Learn about Australian and local native bush foods with a tasting of seasonal seeds, fruits and spices. Your knowledgeable guide will describe how for centuries the Indigenous people used the bush for food.
You'll find out about the uses of certain plants, fruits, grains and spices and about traditional food preparation methods. Enjoy a cooking demonstration of a recipe using some of the ancient native bush ingredients.

Welcome to the Circle of Sand, the Indigenous heart of Ayers Rock Resort. You'll become captivated by the yarns told by an Indigenous storyteller of Aboriginal history, culture and traditional techniques used on the land.
Dependant on the season, learn about traditional bushtucker or an Indigenous man’s “survival kit” including weapons such as katjii (hunting spears), tjutinpa (clubs), kali (boomerangs) and miru (spear thrower).

Desert Gardens Hotel is famous for it's magnificent gardens full of local flora. Meet your Indigenous guide at the hotel's reception for a guided tour of these authentic native gardens and an introduction to the many different plants which Anangu relied on for food and medicinal purposes.

'Tali Wiru', meaning beautiful dune in local Anangu language, encapsulates the magic of fine dining under the Southern Desert sky. Instead of walls, this open-air restaurant has magnificent views of Uluru and the distant domes of Kata Tjuta , and for unique ambiance there's the stillness of the desert at night.
Relax with Champagne and canapes as the sun sets to the sound of a didgeridoo. As day turns to night, stroll to the top of the dune for a table d'hote four-course dinner.
The menu showcases Indigenous Australian flavours including Wagyu Beef Fillet with salt-baked celeriac, paperbark smoked onion soubise, king brown mushroom and smoked bacon jus, or Glacier 51 Toothfish with parsnip and miso mousseline, compressed apple, coastal greens, desert oak, fermented muntries and leek ash. Each dish has been carefully paired with premium Australian wine from across the major regions. Discerning palates will delight at the diversity and quality on offer.
